Welcome! I’m Phillip Thomas, the founder and chief alchemist behind The Drink Workshop.
My path into crafting unique experiences in Ibiza started unexpectedly. As I traveled the world, working in high-end bars, I became deeply curious about how the various products were made. I wasn’t looking for a career in hospitality, but understanding why different spirits tasted the way they did truly captivated me.
When I settled in Ibiza, that curiosity turned into hands-on experimentation. I began brewing beer, making wine, and distilling my own gin and even vodka. I explored making brandy, whisky, and my own bitters. This drive led me to create Botink, my own brand of botanical tonic water, which I proudly produced and distributed across Ibiza for years.
Then came Hierbas. Initially, I found the traditional liqueur too sweet and anise-heavy. But as I experimented, I realized it could be crafted to a much higher standard—a beautiful reflection of Ibiza’s abundant aromatic plants. It was clear to me that many people didn’t know much about how alcohol was truly made. That’s when the idea for the workshops clicked. In 2016, The Drink Workshop officially began.

For me, The Drink Workshop is all about sharing a genuine passion for flavor, aroma, and the joy of creating something with your own hands. My natural affinity for cooking and making food and drink products, combined with a love for herbs, plants, and gardening, fuels every single session.
My goal is to demystify the process and invite you to get hands-on. It’s about connecting you with Ibiza’s authentic side through its botanicals, experiencing the magic of creation, and enjoying that rewarding ‘aha!’ moment. I truly love teaching and sharing these skills, ensuring everyone has a fun, insightful, and memorable time.

Over the years, my dedication to this craft has opened doors to some incredible opportunities. Beyond creating Botink, I’ve had the privilege of crafting a custom gin for a resort and private island in Kenya, and providing bar consultancy for a resort in Jamaica, famously tied to Ian Fleming’s James Bond novels.
The unique nature of The Drink Workshop also started to get noticed. We’ve been fortunate enough to be featured in various online publications, blogs, and even on TravelMan – national television in the UK. This recognition underscores the quality and unique appeal of the experiences I offer. I’m proud to say we’ve been creating good times since 2016.
My Ibiza Life:
16 Years and Counting
People often ask how I ended up here! I first came to Ibiza for just one season, but I quickly fell for the island’s unique blend of international, open culture and its laid-back lifestyle. That one season turned into 16 years, and I’m proud to call this vibrant island home.
My own background is a true mix of cultures—I’ve lived in Germany, Turkey, America, New Zealand, Australia, the UK, Jamaica, St. Maarten, and Kenya. This diverse journey has given me an adaptable and engaging approach, which I bring to every workshop I host.
